Tell me about the apple core earring, such a unique piece. What was thought behind it?

As this is my first boutique in New York City (and the US!), I wanted to give a little nod to New York City, the Big Apple. Last year, I visited the Claes Oldenburg exhibition at the MOMA in New York City and there was an apple core sculpture that I loved. When I thought to create an apple charm, I remembered back to that exhibition and drew inspiration from it to interpret the charm as part of my fine jewelry collection.

Why did you want to open the store now?

The US market is a big part in the development of the brand, so it's important for me to be closer to our US customers and to give them a place to discover complete collections. I adore New York City and spend half my time here, so when I decided to open a boutique in the US, it seemed to be a natural fit to open in NYC.

Why this neighborhood?

The Soho neighborhood represents New York City so well—there is constant movement and it's cool and chic. When I'm here, I can feel the energy and the mixing of different cultures; it's a real pleasure for me. It's one of my favorite areas to go shopping. I chose Lafayette Street in particular because of its special charm.

What do you want the retail experience to convey to your customer?

The jewelry world is often traditional with classic store settings. For my store, like my space in Paris, I want it to be very welcoming, where you immediately feel comfortable—as if it's an escape.

Aurélie Bidermann Apple Core Earring with diamonds, $10,850 (per earring), available exclusively at Aurélie Bidermann, 265 Lafayette Street. The store opens today, August 11.
